Ingredients and quality

The origins and quality of the ingredients we use are important to both us and our customers. We strive to communicate our operations as openly as possible. We are proud of the fact that all the fish and shellfish we serve are certified and sustainably sourced.

The core of our philosophy lies in our name: the Japanese hanko means a seal, or a personal seal of quality. The high quality of the ingredients we use is of utmost importance to us. We are committed to using only pure and safe ingredients. We also offer a wide range of vegetarian and vegan options.

Our restaurants strive to minimise the amount of food waste they produce. We want to offer our customers unique flavours using the freshest possible ingredients. Every dish we serve is made to order in the restaurant. We work hard every day to make sure we can offer the best sushi experience in Finland to our customers.

Fish is the star of our menu, and we can verify the origin of the ingredients we use.  All the fish and shellfish we use are MSC or ASC certified. The MSC certificate ensures that the fish have been caught in an ecologically sustainable way. The MSC (Marine Stewardship Council) is an independent non-profit organisation that sets a standard for sustainable fishing. The goal of MSC is to reduce overfishing, or the unsustainable use of the world’s fisheries. MSC certification is granted to products that meet the environmental norms set by the Council. The goal of the ASC (Aquaculture Stewardship Council) is to reduce the environmental impact of fish farming through its certification programme. Read more about the origins of the fish and shellfish we use >>

Our skilled and motivated staff are our key resource. Our goal is to offer our employees the flexibility to work in different restaurants and cities and to improve and progress in their career in the direction they choose.

We have a strong desire to support employment by offering our employees flexible employment contracts and versatile and long-lasting career opportunities. 
With the emergence of food delivery services, we also want to offer our delicious dishes outside of our restaurants. We will replace our plastic take-away containers with biodegradable containers by the end of the year. We endeavour to use as little plastic in our restaurants as possible. This is how we want to do our part for a healthier environment and climate.
